Do you have a recipe in your collection that when you use brings to mind stories?   I know we have a few of them in my family that brings back lots of memories.  In this community we invite you to share those recipes and stories that make you laugh and cry.

Here is one of our favorites:

There are four of us sisters in our family and we were all in 4-H and took cooking as one of our projects.  If you are familiar with 4-H one of the big events of the year is 4-H Day which is when 4-Her's give talks about what they are doing in their projects or demonstrations of something they have learned to do.  When you are getting ready for the big day you practice...a lot.  Well, you wouldn't think someone could get tired of pancakes, especially special ones, but by the time you practice for weeks almost every day making pancakes it is possible.  Then add to that the fact that each of us girls in turn demonstrated how to make these pancakes.  (and we also took them to Regional 4-H Day and the State Fair) I still love 'em but I think that a few members of our family would be glad if they never saw them again!

Strawberry-Filled Roll-Up Pancakes

Choose your favorite Pancake Recipe and make the batter thin using milk. 

Filling:

4-oz Cream Cheese, softened
Add milk until a paste, 1-2 TBS (spreading consistency)
Vanilla or Almond to taste (or any other favorite flavoring)
Strawberry Preserves

Fry pancakes and lay flat upside down on plate.  Spread with Cream Cheese Filling and Strawberry Preserves.  Roll up pancakes and place on seam, and enjoy!
